The Sunday Post #2 Gluten & Lactose Free Pancakes

Seeing as shrove Tuesday was this week, I thought I'd get in on the action and try my hand out at some pancake making. As I'm trying to avoid Lactose and Gluten at the moment, I've had to amend traditional recipes to and swap out the flour and milk with some replacement... The results? Surprisingly delicious!!!

I followed the quantities and method of this recipe here but used the following ingredients:

110g Dove's Farm White Self-Raising Flour (the original recipe called for plain flour but I only had this or bread flour but when I tried this out it worked a treat!)
2 eggs
200ml LactoFree Fresh Semi Skimmed Milk
75ml Water
50g Pure Soya Dairy Free Spread (or you could use butter from the LactoFree range)

Sieve the flour, add the eggs and whisk. Slowly add the milk and water. Gently melt the butter before adding 2tbsp's into the mix. Save the rest of the butter to oil the pan.

Grab your pancake pan (any flat pan) and wait until its hot before greasing it with melted butter using some kitchen roll and adding around 2tbsp's of the pancake batter (you don't have to be too precise) I normally put my batter in a measuring jug so I can just pour the mixture straight onto the pan (it makes it easier!) 

Using a spatula I gently lift the edges of the pancake to make sure that they don't stick to the pan, lift the edge of the pancake regularly to check if the underside is golden brown, once it is, its ready to flip.

Check that both sides have cooked before serving, then add your topping of choice, I love simple lemon and sugar, or (as pictured above) honey and blueberries with a dusting of icing sugar.
